新潟県出身。関西圏の老舗旅館で和食調理の修行をつむ。その後、軽井沢に移り、ホテルや保養所の料理長を務めてきた。日本料理の伝統技術をベースとし、軽井沢のモダンな雰囲気を表現した創作料理の開発にも意欲的に取り組んでいる。和食調理歴25年。
Born in Niigata Prefecture, he honed his skills in Japanese cuisine at prestigious inns in the Kansai region. At the age of 30, he assumed the role of Head Chef at hotels and resorts in the town. Drawing on traditional Japanese culinary techniques, he enthusiastically develops creative dishes that embody the modern atmosphere of Karuizawa. With 25 years of experience in Japanese cuisine.

神奈川県横須賀市出身。17歳の頃、和食の道に入り料理人として歩み始め、神奈川県、東京都の会席料理屋や割烹を中心に修行を積む。その後、ミシュラン掲載店有する神奈川県のリゾートホテルの総料理長を務め、2018年当グループの料理長として就任。
Keita Fukumoto, Executive Head Chef at Kutsukake Stay Group.Born in Yokosuka City, Kanagawa Prefecture, he embarked on his culinary journey at the age of 17, cultivating his skills at various traditional Japanese restaurants and kaiseki ryotei in Kanagawa and Tokyo. He later assumed the role of Executive Head Chef at a resort hotel in Kanagawa Prefecture, listed in the Michelin Guide. In 2018, he became the head chef at our Group.
